Apple Cake is sweet and tender and all of the spices taste of fall. I have even been known to enjoy a slice with my morning coffee. It is just that good.
I hope you will give Apple Cake a try.
Apple Cake
1 1/2 cups flour
1/2 tsp. baking soda
1/4 tsp. salt
1/2 tsp. cinnamon
1/4 tsp. ground cardamom
1/4 tsp. ground allspice
3/4 cups oil
1 cup sugar
2 eggs
1 tsp. vanilla
1 1/2 cups diced, peeled apples
1/2 c. chopped pecans
Beat the sugar and oil. Add the eggs and and then the vanilla.
In a separate bowl, mix the flour, baking soda, salt, cinnamon, cardamom and allspice. Add to the wet ingredients and mix until incorporated.
Add the apples and pecans. Pour into a greased 9x9 pan. Bake at 350 degrees F for 30-35 minutes or until a toothpick inserted into the middle comes out clean.
While the cake is still warm, pierce the top all over with a skewer. Pour warm glaze (ingredients below) over the top and allow to cool.
Glaze
1 stick butter
1 cup brown sugar
1/4 cup milk
Heat ingredients in a pot until bubbly, stirring occasionally. Pour over warm cake. Allow the glaze to soak in before serving.

Thanks for posting this. I got rave reviews when I served this for my Thursday night Project Runway get-together. Think I'll have some for breakfast right now!
