Apple Cake

© shoutingforha
Today I would like to share a recipe for one of my boy's favorite sweet treats, Apple Cake.  I've been baking it rather frequently in an effort to consume as many Honey Crisp apples as possible while they are still readily available.

Apple Cake is sweet and tender and all of the spices taste of fall.  I have even been known to enjoy a slice with my morning coffee.  It is just that good.

I hope you will give Apple Cake a try.
Apple Cake

1 1/2 cups flour
1/2 tsp. baking soda
1/4 tsp. salt
1/2 tsp. cinnamon
1/4 tsp. ground cardamom
1/4 tsp. ground allspice
3/4 cups oil
1 cup sugar
2 eggs
1 tsp. vanilla
1 1/2 cups diced, peeled apples
1/2 c. chopped pecans

Beat the sugar and oil.  Add the eggs and and then the vanilla.

In a separate bowl, mix the flour, baking soda, salt, cinnamon, cardamom and allspice.  Add to the wet ingredients and mix until incorporated.

Add the apples and pecans.  Pour into a greased 9x9 pan.  Bake at 350 degrees F for 30-35 minutes or until a toothpick inserted into the middle comes out clean.

While the cake is still warm, pierce the top all over with a skewer.  Pour warm glaze (ingredients below) over the top and allow to cool.

Glaze

1 stick butter
1 cup brown sugar
1/4 cup milk

Heat ingredients in a pot until bubbly, stirring occasionally.  Pour over warm cake.  Allow the glaze to soak in before serving.

Can you bring some over for breakfast on Saturday? And make some coffee too?

Thanks for posting this. I got rave reviews when I served this for my Thursday night Project Runway get-together. Think I'll have some for breakfast right now!
