As you longtime readers know, my boy is a huge fan of breakfast. One of his favorite breakfast treats is Bacon & Cheddar Pancakes. While they aren't going to win an award for being the most healthy meal, these pancakes are truly delicious.
The saltiness of the bacon and cheddar combined with the sweetness of maple syrup is spectacular.
To make your own, you can use the recipe below or just add bacon and cheddar cheese to your favorite pancake recipe. It's that easy.
Bacon & Cheddar Pancakes
2 c. flour
2 Tbs. sugar
4 tsp. baking powder
1/2 tsp. salt
2 c. milk
2 eggs, lightly beaten
3 Tbs. oil (or bacon grease)
4 slices thick cut bacon, cooked until crisp
1 1/2 c. grated sharp cheddar

Combine the dry ingredients. Add the milk, eggs and oil and mix until thoroughly combined.

Gently fold in the bacon and cheese.

Cook the batter the same way you would any other pancake. Notice how the cheese gets all golden brown and crispy.
One bit of advice... Make sure you cook the bacon until it is extra crispy. This will prevent it from becoming chewy once the pancakes are cooked.
